Banana Bread

I have a ridiculous obsession with banana bread. Anytime I have extra bananas lying around I can’t stop thinking about when I can make some – especially with the recipe I found. Best part, I found this recipe in the local newspaper, and let’s just say, I’m so impressed! Hope you guys enjoy it as much as I do!

Chocolate Chip Banana Bread

1 cup (250 ml) mashed very ripe banana
1 cup (250 ml) granulated sugar
1/4 cup (50 ml) vegetable oil
1/2 cup (125 ml) sour cream
2 eggs beaten
1 ½ cup (375 ml) all-purpose flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) baking soda
1/2 tsp (2 ml) salt
1/2 cup (125 ml) chocolate chips

1. In a large mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly
2. In a separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing just until combined. Stir in chocolate chips
3. Pour into greased 9×5-inch (2L) loaf pan. Bake in 325°F (160°C) oven for 1 to 1 ¼ hours or until tester inserted in centre comes out clean
4. Cool in pan for five minutes before turning onto rack to cool completely. Slice to serve. Makes one loaf
